One morning in December 2024 I walked into a room full of my own family and felt nothing turn toward me.

No one had decided to stop expecting things from me. It just happened, slowly, over years I never clocked, until the man in the mirror was a stranger wearing my face. A woman had left by then and was replaced inside a month, and the speed of it told me the truth I had been avoiding: I had let myself become that easy to overlook. That does not sit in your chest. It sits in your spine.

So that morning I decided. Not a promise, not "this time for real." A decision, the kind you make once and never argue with again. Then I started, on my own, the work of one honest day and then the next. What it built is below. The first day of it, in full. If even some of this was your life too, this is where you start.

The one technique

BHUNA

Chicken or paneer, same method. Learn it once and every karahi, every bhurji, every curry you cook for the rest of your life is better.

  1. Heat 1 tsp desi ghee in a heavy pan. Add zeera. Wait for it to crackle.
  2. Add 1 finely chopped pyaaz. Cook on low to medium 4 to 5 minutes until deep golden. No water. Do not rush this. The flavour starts here.
  3. Add 1 tsp ginger garlic paste. Cook 1 minute, until the raw smell goes.
  4. Add 1 chopped tamatar with haldi, dhania, red chilli and salt. Cook on low 6 to 8 minutes. It is ready when the oil separates and pools at the edges.
  5. Add your protein. Chicken thigh: 8 to 10 minutes, no water, let it release its own juices. Paneer: 3 minutes only, fold gently, do not stir hard.
  6. Finish with garam masala. Cover. Rest 2 minutes.
The oil separating from the masala is the moment that makes it bhuna. That one step takes home cooking to dhaba level, and it sits underneath every great desi dish.
